Paul Lister, the owner of Alladale, is creating an eco-tourism project by fencing off the reserve and adding a range of native species which were removed by man many centuries ago. Guests stay at the Alladale luxury Lodge, where its interior has a combination of traditional furniture fused with contemporary touches. The finest organic food is available, with fresh roast salmon and trout from the rivers, and home-grown venison straight from the reserve. Two new guest cottages open Last month (June 2009) which will cater to smaller groups of between 2 and 8 guests.
